Croquettes of Beef Palates

Ingredients

Directions

  1. Mince the trimmings of beef palates finely.

  2. Thicken the bechamel sauce and bring it to a boil.

  3. Stir in the minced beef and add seasoning to taste.

  4. Spread the mixture on a dish and let it cool.

  5. Once cool, shape the mixture into round balls or long shapes.

  6. Dip each croquette in beaten eggs, then roll in bread crumbs.

  7. Repeat the egg and crumb coating to prevent bursting during frying.
