Ingredients

Directions

  1. In a large pan, make a hole in the center of the flour.

  2. Dissolve the yeast in warm water and mix in the dissolved butter.

  3. Pour the yeast mixture into the center of the flour and mix in enough flour to create a smooth thick batter.

  4. Sprinkle flour over the batter, cover with a cloth, and let it rise in a warm place.

  5. Once risen and cracked on the surface, add salt and mix in the remaining flour with your hands.

  6. Add tepid soft water as needed to form a smooth, firm dough and knead well.

  7. Sift flour over the dough, cover with a cloth, and let it rise again for 30 minutes.

  8. Flour two 2-pound tins and fill them with the dough or divide the dough into pieces of about 1 pound each.

  9. Knead the pieces, roll them into round balls, flatten slightly, and stack the smaller pieces on the larger.

  10. Make an indentation on top and score the top piece all around.
