Why it works: Sauce and haddock match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 200 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Buttered Eggs with Shrimps, Mushrooms, Truffles, Asparagus, or Tomatoes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Butter the toast and place it on a serving plate.

  3. In a saucepan, warm the picked shrimps in milk.

  4. Mix the warmed shrimps with Bechamel Sauce.

  5. Spoon the shrimp mixture into the center of each egg on the toast.

  6. Alternatively, use kippered haddock, chopped truffles, sautéed mushrooms, boiled asparagus, or pureed tomatoes.
