Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Adds richness and helps bind the sauce together.
Brown thickening (no. 31)
Thickens the sauce so it clings to the meat.
Mushroom ketchup
Contributes concentrated savoury, umami depth.
Anchovy sauce
Adds salty, savoury depth to the sauce.

The step that matters

Bring the mixture to a boil. Egg yolk can curdle or scramble if overheated, and the thickening needs heat to set. Boiling should be done carefully so the sauce stays smooth and thickened.
