Coquilles of Salmon

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. In a stewpan, combine the flaked salmon, butter, picked shrimps, sliced mushrooms, half-glaze, cayenne pepper, and coarse sea salt.

  2. Simmer the mixture for five minutes.

Fill and bake

  1. Fill scallop shells with the mixture, one for each person.

  2. Top with fried bread-crumbs and small pieces of butter.

  3. Place in a 400°F (200°C) oven until hot and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Salmon
Forms the main body of the filling and provides the flavour base.
Butter
Adds richness and moisture, and helps the filling stay soft and glossy.
Half-glaze
Adds concentrated savoury depth and body to the sauce around the fish.
Shrimps
Add a sweet, delicate seafood flavour and tender texture to the mixture.
Mushrooms
Contribute earthy flavour and moisture to the filling.

The step that matters

Heating through in the oven. The filling is already cooked, so the goal is only to heat it until hot. Overbaking dries the salmon and toughens the shrimp, while the buttered crumbs should brown lightly without burning.
