What each ingredient does

Mayonnaise sauce
Coats the chicken and dish, adding richness, moisture and a creamy texture.
Hard-boiled eggs
Add a firm, mild, creamy texture and body to the salad.
White cos lettuce
Forms the crisp base that holds the other components.
Anchovies
Contribute a salty, savoury depth of flavour.

The step that matters

Mask the chicken with mayonnaise. Mayonnaise is an emulsion that can separate or become oily if it is too warm or overworked. Using it cold and evenly spread keeps the coating smooth and stable.

Swap the tomato

How well each one fits the dish's main ingredients (chicken, sauce, lettuce, egg, cucumber, beetroot):

  1. Chivefits better
  2. Spinachfits better
  3. Mustardfits better
  4. Tomatothe original

Fit is the average pairing score against chicken, sauce, lettuce, egg, cucumber, beetroot. Candidates are from the same food group and used in at least 100 recipes.
