Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, cream the butter with a wooden spoon until it resembles thick cream.

  3. Gradually add the flour, sugar, salt, and beaten eggs (whites and yolks separated). Mix until thoroughly combined.

  4. If desired, fold in dried cherries, sliced citron, or sherry/brandy.

Bake

  1. Pour the batter into a baking tin lined with buttered paper.

  2. Bake for 1.5 to 2 hours, or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake its tender, rich texture.
Eggs
Bind the batter and add structure and richness as the cake sets in the oven.
Flour
Forms the main structure that holds the cake together as it bakes.
Sugar
Sweetens the cake and helps cream the butter into a light, aerated base.

The step that matters

Creaming the butter. Beating butter with sugar until thick and pale traps air bubbles that expand in the oven. Under-creamed butter gives a dense, heavy cake, so the butter should be beaten until it resembles thick cream before adding the other ingredients.
