What each ingredient does

Calf's head meat
Provides the main body of the hash, served in slices in the finished gravy.
Liquor from boiling the head
Supplies the stock base, and reducing it concentrates flavour into the gravy.
Butter and flour (in the method)
Thicken the strained gravy so it coats the meat rather than running thin.
Sherry
Adds acidity and aromatic depth to the finished gravy.
Lemon juice
Adds acidity that brightens the rich gravy and balances its savoury flavour.

The step that matters

Warm the meat without boiling. Boiling toughens the meat's proteins and can break the thickened gravy, so the slices should only be heated gently until warmed through.
