Currant Jam

Ingredients

Directions

Prepare

  1. Gather currants on a fine day and strip them from the stalks.

Make the jam

  1. In a preserving pan, combine currants with sugar in the proportion of 1 pound of sugar for every pound of fruit.

  2. Stir the mixture and boil for 10 minutes.

  3. Continue boiling for 30 minutes or longer until thick.

Seal

  1. Once cooled, beat the egg white and spread it over the jam to form a hard cover that excludes air.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Currants
Provide the fruit, pectin and tartness that give the jam its body and flavor.
Loaf sugar
Sweetens the jam and, with boiling, helps it thicken and keep.
Egg white
Beaten and spread on top, it dries to a hard layer that keeps air off the jam.

The step that matters

Continue boiling until thick. Boiling drives off water and concentrates the sugar and fruit pectin so the jam sets; stopping too early leaves it runny and more prone to spoiling.

Swap the currant

How well each one fits the dish's main ingredients (sugar, egg):
