What each ingredient does

Eels
Form the main filling and provide the rich, savoury flesh of the pie.
Puff pastry
Forms a crisp, flaky crust that browns as it bakes over the filling.
Bechamel sauce
Adds creamy moisture so the filling does not dry out in the oven.
Forcemeat
Lines the dish, adding a seasoned meaty layer beneath the eels.
Lemon juice
Adds acidity that brightens the rich flavour of the eels.

The step that matters

Cover with puff pastry. The pastry must seal the dish fully so steam stays inside and cooks the eels gently. A gap lets moisture escape and the filling can dry out or cook unevenly.

Swap the nutmeg

How well each one fits the dish's main ingredients (parsley, shallot, pepper, lemon, sauce):

  1. Tarragonfits better
  2. Capersfits better
  3. Thymefits better
  4. Nutmegthe original

Fit is the average pairing score against parsley, shallot, pepper, lemon, sauce. Candidates are from the same food group and used in at least 100 recipes.
