Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Enrich and thicken the cream sauce as they gently set with heat.
Cream
Adds richness and a smooth, silky texture to the sauce.
Flour
Thickens the gravy so the sauce clings to the fowl.
Onion
Adds savory depth to the stock used for the gravy.

The step that matters

Stir the egg yolks into the cream and add to the sauce, heating thoroughly without boiling.. Egg yolks thicken when heated gently but curdle and turn grainy if the sauce boils, so keep the heat moderate and stir constantly.

Swap the mace

How well each one fits the dish's main ingredients (lemon, onion, pepper, flour, cream, egg):

  1. Parsleyfits better
  2. Turmericfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against lemon, onion, pepper, flour, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
