Mushrooms, Baked

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean the mushrooms and remove the stalks.

  2. Wipe the mushrooms with a damp cloth and sprinkle with a little fine salt.

Bake and serve

  1. Place the mushrooms in a baking dish and put a small piece of butter on each one.

  2. Sprinkle with pepper and bake at 400°F (200°C) for about 20 minutes, or longer if the mushrooms are large.

  3. Serve hot, piled high in the center of a warm dish with gravy around.

What each ingredient does

Mushroom caps
Form the main body of the dish and soften into a tender, juicy base as they cook.
Butter
Adds moisture and richness, helping the mushrooms brown and carry flavor in the oven.

The step that matters

Baking time for mushroom size. Mushrooms are mostly water, and larger caps need more time for heat to reach the center and release juices. Underbaked caps stay tough and watery, while overbaking shrinks and dries them, so check for tender, cooked flesh rather than relying only on the clock.
