What each ingredient does

Mealy potatoes
Their starch thickens the stock and gives the soup a smooth, body-rich texture.
Stock
Forms the liquid base that carries the potato flavor and loosens the mashed potato.

The step that matters

Adding the mashed potatoes to the stock. Potato starch can clump into lumps if the purée is added too quickly or to stock that is not hot enough. Adding it gradually to boiling stock lets it disperse evenly, and sieving afterward removes any remaining lumps for a smooth soup.

Swap the potato

How well each one fits the dish's main ingredients (pepper, bread):

  1. Capsicumfits better
  2. Tomatofits better
  3. Spinachfits better
  4. Potatothe original

Fit is the average pairing score against pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
