Rabbit Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Cut the rabbit, remove the breastbone, and bone the legs.

  2. Layer the rabbit, slices of ham, forcemeat balls, and hard-boiled eggs in a pie dish, seasoning each layer with salt, white pepper, pounded mace, and grated nutmeg.

Bake and serve

  1. Pour in about ½ pint of water, cover with puff pastry, and bake in a preheated oven at 400°F (200°C) for about 1 hour.

  2. If the crust browns too much, cover it with a piece of paper to prevent burning.

  3. When done, pour a little gravy through the hole in the center of the crust.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rabbit
Forms the main meat filling, becoming tender as it cooks slowly under the crust.
Hard-boiled eggs
Add firm, sliced richness and body to the layered filling.
Ham
Adds salty, savory flavor that complements the rabbit.
Puff pastry
Forms a flaky, golden crust that seals the filling while baking.

The step that matters

Covering the crust when it browns. Puff pastry browns quickly in a hot oven, and the sugars and proteins in it can scorch before the rabbit is cooked through. A loose paper cover slows browning while the filling finishes cooking.

Swap the white pepper

How well each one fits the dish's main ingredients (rabbit, ham, mace, nutmeg, egg):
