Roast Turkey

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat oven to 400°F (200°C).

  2. Fasten a sheet of buttered paper onto the breast of the turkey.

Roast

  1. Place the turkey at a distance from the fire to start, then move it closer as it cooks.

  2. Baste the turkey frequently while it cooks.

  3. About 30 minutes before serving, remove the paper and lightly dredge the turkey with flour.

  4. Add a piece of butter to the basting ladle and baste the turkey with it as it melts.

Serve

  1. Once the turkey is nicely browned and well basted, serve it with good brown gravy and bread sauce.

  2. For garnish, add fried sausages or forcemeat balls around the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Forms the main body of the dish and provides the meat that cooks through during roasting.
Butter
Adds fat and richness, and helps the surface brown while basting.
Flour
Lightly dusted on the turkey to help the surface brown and crisp.

The step that matters

Basting the turkey frequently. Basting spreads melted fat and juices over the surface, keeping it moist and encouraging even browning. Letting the surface dry out can leave the skin pale and tough.
