Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Roast Goose

Ingredients

Directions

Prepare the goose

  1. Select a goose with clean white skin, plump breast, and yellow feet.

  2. Let the goose hang for a few days to improve flavor, if possible.

  3. Pluck, singe, draw, wash and wipe the goose.

  4. Cut off the neck close to the back, leaving enough skin to turn over.

  5. Cut off the feet at the first joint and separate the pinions.

  6. Beat the breastbone flat with a rolling pin.

  7. Skewer the under part of each wing.

  8. Draw up the legs closely.

  9. Insert a skewer through the middle of each leg and through the body.

  10. Cut off the end of the vent.

  11. Make a hole in the skin for the rump.

Stuff and truss

  1. Make a sage-and-onion stuffing with the ingredients and fill the goose.

  2. Pass the rump through the hole.

  3. Tie the neck skin to the back.

Roast and serve

  1. Roast the goose over a brisk fire, basting well for 1 to 2 hours, depending on size.

  2. Remove the skewers.

  3. Serve with gravy and apple sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Goose
Provides the main meat and rendered fat that bastes the bird as it roasts.
Onions
Add sweetness and moisture to the sage stuffing as they soften during roasting.
Bread crumbs
Absorb juices and fat, giving the stuffing body and a soft, moist texture.
Butter
Adds richness and fat, helping the stuffing brown and taste rounded.
Egg
Binds the bread crumbs and onions so the stuffing holds together when cooked.

The step that matters

Roast the goose over a brisk fire, basting well. Goose has a thick layer of fat under the skin. Basting and keeping the heat brisk helps that fat render out, which crisps the skin and keeps the meat from drying. Cooking time depends on size, so check the bird rather than relying on the clock alone.

Swap the onion

How well each one fits the dish's main ingredients (sage, bread, butter, pepper, egg):

  1. Capsicumfits better
  2. Shallotfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against sage, bread, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
