Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Meat Patties

Oven, in the book's wordsA brisk oven

Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the filling

  1. In a stewpan, combine minced veal, minced ham, cream, veal gravy, lemon peel, cayenne, salt, pepper, lemon juice, and butter.

  2. Stir over medium heat for 10 minutes, ensuring the mixture does not burn.

Bake the shells

  1. Roll out puff pastry to 1 inch thick and line patty pans with it.

  2. Place a small piece of bread in each pastry shell and cover with another layer of pastry.

  3. Brush the tops with egg yolk and bake at 400°F (200°C) for about 30 minutes.

Fill and serve

  1. Once baked, cut a round piece from the top, remove the bread, and fill the patties with the meat mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main meaty body of the filling.
Ham
Adds salty, savory flavor to the filling.
Cream
Adds moisture and a soft, smooth texture to the mixture.
Butter
Adds richness and fat, helping the filling stay smooth and tender.
Veal gravy
Adds savory depth and extra moisture to the filling.
Puff pastry
Forms flaky, layered shells that rise and brown in the oven.

The step that matters

Stirring the filling over medium heat. The mixture holds cream, butter and meat proteins and sugars that scorch quickly against hot metal. Constant stirring spreads heat evenly and keeps the filling smooth rather than burnt on the bottom.
