Brown Stock

Ingredients

Directions

Prepare

  1. Break up the bone and remove all marrow.

  2. Cut the meat into small pieces.

Make the stock

  1. In a stock pot, combine cold water, meat, and bone; place on the fire.

  2. Once the water is hot, add a little coarse sea salt to help scum rise.

  3. When boiling, skim off the scum carefully.

  4. Add diced vegetables, herbs, and peppercorns to the pot.

  5. Simmer gently for 6‑7 hours, adding a tablespoon of cold water occasionally to help scum rise.

Strain and cool

  1. Strain the stock into a clean basin and let it cool uncovered to skim off the fat.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of beef
Provides meat and collagen-rich connective tissue that gives the stock body and savoury flavour.
Sweet herbs
Add aromatic flavour to the stock during the long simmer.
Onion
Adds sweetness and savoury depth as it cooks down into the stock.
Carrots
Contribute gentle sweetness and aroma to the finished stock.

The step that matters

Skimming the scum. Scum is coagulated protein and impurities that rise as the water heats. Skimming it while the stock is coming to a boil and adding a little cold water to help it rise keeps the stock clear and clean-tasting rather than cloudy or bitter.

Swap the onion

How well each one fits the dish's main ingredients (beef, carrot, turnip):

  1. Parsnipfits better
  2. Leekfits better
  3. Beetrootfits about as well
  4. Onionthe original

Fit is the average pairing score against beef, carrot, turnip. Candidates are from the same food group and used in at least 100 recipes.
