Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the main bulk; their starch softens into a thick, smooth puree when cooked.
Stock
Adds moisture and savoury flavour while cooking the chestnuts until tender.
Butter
Adds fat and richness, and carries flavour when the chestnuts are fried.

The step that matters

Fry the chestnuts without browning. Butter that browns turns bitter and dark, and the flavour carries into the puree. Keeping the heat gentle lets the chestnuts take on richness while staying pale and mild.
