  1. Blanch or parboil the sweetbreads to whiten them.

  2. Rub the sweetbreads with butter and roast them.

  3. Cut the sweetbreads lengthwise, dip them in egg and bread crumbs, and fry or broil them in paper cases.

  4. Alternatively, bake the whole sweetbreads in the oven.

  5. Slice them crosswise and toss in butter.

  6. Serve with tomato sauce and decorate with lemon slices, barberries, or thin slices of toasted ham, bacon, or tongue.
