What each ingredient does

Lean pork
Forms the main body of the sausage, providing the meaty bulk of the filling.
Bacon fat
Adds fat for moisture and a richer texture in the finished sausage.
Butter
Adds richness and a glossy coating to the cooked sausages.

The step that matters

Smoke the sausages for three days. Smoke must penetrate evenly through the casing, and the sausages need enough drying and curing to be safe and preserved. Too short a smoke leaves them underflavoured and less stable.

Swap the coriander

How well each one fits the dish's main ingredients (pork, meat, pepper, allspice, nutmeg, vinegar, butter):

  1. Thymefits better
  2. Clovefits better
  3. Cinnamonfits better
  4. Corianderthe original

Fit is the average pairing score against pork, meat, pepper, allspice, nutmeg, vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
