Marbled Veal

Ingredients

Directions

  1. Season the cold roasted fillet of veal with spices and beat it in a mortar.

  2. Skin the cold dried tongue, cut it up, and pound it to a paste, adding nearly its weight in fresh butter.

  3. In a pot, layer some of the veal, then add lumps of the pounded tongue, followed by another layer of veal and more tongue.

  4. Press it down and pour clarified butter on top.
