The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Boil the fish until cooked, then remove the skin and bones.

  2. Mince the fish flesh with chopped herbs, onion, and lemon peel if using.

  3. In a pan, stew the mixture in butter, then add lemon juice and essence of shrimps.

  4. Allow the mixture to cool, then mix in the beaten eggs.

Bake

  1. Place portions of the mixture into puff pastry and bake at 400°F (200°C) until the crust is golden.

What each ingredient does

Eggs
Bind the cooled filling so the patties hold their shape when baked.
Butter
Adds richness and moisture as the mixture stews.
Puff pastry
Forms a flaky, golden crust that encloses the filling as it bakes.
Lemon juice
Adds acidity that brightens the flavour of the fish.

The step that matters

Allow the mixture to cool before adding the eggs. Raw egg added to a hot mixture can begin to scramble and loosen unevenly, while a cooled mixture blends smoothly and binds evenly, helping the patties hold together in the pastry.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (fish, onion, butter, shrimp, egg):

  1. Coconutfits better
  2. Lemonthe original
  3. Avocadofits less well
  4. Pumpkinfits less well

Fit is the average pairing score against fish, onion, butter, shrimp, egg. Candidates are from the same food group and used in at least 100 recipes.
