Herring Pie

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Scale, draw, and wipe the herrings, then cut off their heads, tails, and fins.

  2. Line a dish with a light pie crust and add some butter at the bottom.

  3. Season the fish with plenty of black pepper, nutmeg, and a little coarse sea salt.

  4. Lay the fish in the dish and sprinkle with lemon juice.

  5. Cover with a top crust and bake at 300°F (150°C) until done.

  6. Optionally, toss the fish in butter before placing them in the pie and add some chopped shallot.
