What each ingredient does

Calf's head
Gives the soup its body and rich, gelatinous texture as it cooks slowly.
Knuckle of veal
Adds collagen and meaty flavour that deepens the broth during long simmering.
Turnip
Contributes mild sweetness and aroma to the broth as it cooks.
Onion
Adds savoury depth and aroma to the broth as it simmers.
Lemon
Adds acidity that brightens the rich broth just before serving.

The step that matters

Boiling slowly for 3 hours. A gentle simmer draws gelatin and flavour out of the bones and head while keeping the broth clear. A hard rolling boil emulsifies fat into the liquid and makes it cloudy and greasy.

Swap the mace

How well each one fits the dish's main ingredients (veal, onion, turnip, clove, pepper, lemon):

  1. Thymefits better
  2. Marjoramfits better
  3. Parsleyfits better

Fit is the average pairing score against veal, onion, turnip, clove, pepper, lemon. Candidates are from the same food group and used in at least 100 recipes.
