Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Make short crust pastry and cut it into rounds.

Assemble

  1. In a bowl, mix together currants, sugar, chopped peel, mixed spice, nutmeg, and butter.

  2. Place a tablespoon of the mixture on each round of pastry, folding the edges together.

  3. Cut a small hole in the top of each cake.

Bake

  1. Bake on a greased baking sheet for 10 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Currants
Provide the bulk of the fruity filling and its sweetness and moisture.
Butter
Adds fat that enriches the filling and gives a richer texture.
Sugar
Sweetens the filling and helps it brown during baking.
Short crust pastry
Forms the edible case that holds the filling while the cakes bake.

The step that matters

Folding the pastry edges together. If the edges are not sealed well, the filling can leak out during baking, leaving the cakes dry and the pastry underbaked at the seams.

Swap the currant

How well each one fits the dish's main ingredients (nutmeg, sugar, butter):
