Directions

Prepare the ox-tail

  1. Disjoint the ox-tail and cut it into pieces about 1.5 inches long, dividing the thick parts into quarters.

  3. Remove the pieces from the water and wipe them with a soft cloth.

Make the stew

  1. Place the pieces in a stewpan with stock or water.

  2. Add the onion, carrots, savory herbs, salt, and pepper.

  3. Simmer gently until the meat easily separates from the bones, about 3.5 hours.

Serve

  1. Transfer the pieces to a hot dish.

  2. Reduce the gravy and strain it over the meat.

  3. Garnish with toasted sippets.

  4. Add a little lemon juice if desired.

What each ingredient does

Ox-tail
Provides the meat and bones whose collagen softens into a rich, tender stew during long simmering.
Stock or water
Forms the cooking liquid that gently breaks down the meat and becomes the gravy.
Onion
Adds savoury sweetness and aroma to the broth as it simmers.
Carrots
Contribute sweetness and body to the gravy as they soften during cooking.

The step that matters

Simmer gently until the meat easily separates from the bones. A gentle simmer lets collagen in the connective tissue slowly convert to gelatin, making the meat tender. A hard boil toughens the meat and makes the broth cloudy, so keep the liquid barely moving.

Swap the lemon

The recipe marks lemon as optional. How well each one fits the dish's main ingredients (onion, clove, carrot, pepper):

  1. Limefits better
  2. Avocadofits about as well
  3. Mangofits about as well
  4. Lemonthe original

Fit is the average pairing score against onion, clove, carrot, pepper. Candidates are from the same food group and used in at least 100 recipes.
