Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hops
Adds bitterness and aroma that give the starter its characteristic flavor.
Mashed potatoes
Supply starch and moisture that feed the yeast as it ferments.
Sugar
Provides quick food for the yeast, driving fermentation and gas production.
Dry hop yeast
Ferments the sugars and starches, producing gas that makes the starter rise and work.

The step that matters

Remove from heat quickly to prevent discoloration. Hops boiled too long can darken and turn bitter, and prolonged heat changes their flavor and color. Pulling the pot off the heat promptly keeps the liquid clear and the taste clean.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar, ginger):

  1. Mustardfits better
  2. Capsicumfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against hops, sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
