What each ingredient does

Eggs
Bind the dough and add structure and richness as they set in the hot fat.
Buttermilk
Adds moisture and tang, and reacts with the leavening to help the cakes rise.
Baking soda
Reacts with the acid in buttermilk and cream of tartar to produce gas that lightens the dough.
Cream of tartar
Acid that works with baking soda to leaven the dough and balance flavor.
Sugar
Sweetens the cakes and helps them brown during frying.
Lard or butter
Fat that tenderizes the dough and carries flavor; hot lard also fries the outside golden.

The step that matters

Frying in hot lard. If the lard is not hot enough, the cakes absorb excess fat and turn greasy before the outside browns. Hot fat sets the surface quickly, which keeps the inside tender and the crust golden.
