Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Steam the turkey

  1. Select a good fat turkey and steam it over a large kettle or hang it in a wash boiler with enough water to create steam without touching the turkey.

  2. Cover tightly and steam for about 1 hour, depending on the size of the turkey.

  3. Once tender, remove the turkey and rub the inside with pepper and coarse sea salt.

Make and stuff the dressing

  1. Prepare the dressing by mixing oysters, stale bread, butter, and enough sweet milk to moisten the bread.

  2. Season the dressing to taste.

  3. Stuff the turkey with the dressing and sew it up.

Roast

  1. Place the turkey in a pan with a little water and roast in a slow oven at 300°F (150°C) for 3 to 4 hours, basting and turning often.

What each ingredient does

Turkey
Forms the main body of the dish, cooked gently by steaming and then roasting.
Oysters
Add briny, savoury flavour to the dressing.
Stale bread
Absorbs milk and butter to form a soft, moist dressing structure.
Butter
Adds fat for richness and a softer, moister dressing texture.

The step that matters

Roasting with basting and turning. Long slow roasting with regular basting and turning keeps the large bird moist and cooks it evenly, while the stuffing reaches a safe, fully cooked temperature in the cavity.
