Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, baking powder, and salt.

  3. Cut in butter until crumbly.

  4. Add sweet milk and mix quickly and lightly.

  5. Roll out the dough to less than ¼ inch thick.

Shape and bake

  1. Cut into squares about 6 inches across.

  2. Place a large tablespoon of the minced meat mixture in the center of each square.

  3. Fold the dough over to form a triangle and pinch the edges to seal.

  4. Bake until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough once mixed with liquid.
Butter
Cut into the flour to make the dough tender and crumbly.
Baking powder
Releases gas in the dough to help it rise and lighten during baking.
Sweet milk
Hydrates the flour to form the dough and adds moisture.
Minced poultry, veal, ham, or lamb
Provides the savory, well-seasoned filling inside the turnovers.

The step that matters

Mix the milk into the dough quickly and lightly. Overworking wheat flour dough once liquid is added develops gluten, which makes the baked turnovers tough rather than tender. Brief mixing keeps the pastry light.
