Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the cauliflower

  1. Cook the cauliflower in salted water for 1 hour.

  2. Drain the cauliflower and break it apart.

Assemble and bake

  1. Layer the cauliflower in an escalop dish, moistening each layer with cream sauce and sprinkling with grated cheese.

  2. Continue layering until all the cauliflower is used, using 2 tablespoons of cheese and 1 pint of sauce for each head.

  3. Cover with bread crumbs and cheese, then dot with butter.

  4. Bake at 350°F (175°C) for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cauliflower
Forms the bulk of the dish and becomes tender as it cooks in the water and oven.
Cream sauce
Adds moisture and richness, keeping the layers from drying out during baking.
Grated cheese
Melts into the sauce and browns on top, adding savoury flavour and colour.
Butter
Adds fat and richness, helping the top crust brown during baking.

The step that matters

Layering with sauce. Moistening each layer with cream sauce keeps the cauliflower from drying out in the oven. Spreading the sauce through every layer distributes moisture and flavour evenly.
