Why it works: Coconut and vanilla match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 2,294 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Cocoanut Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the filling

  1. Preheat the oven to 350°F (175°C).

  2. Bring the milk to a boil in a saucepan.

  3. Add the coconut and sugar to the boiling milk.

  4. Mix the flour with a small amount of cold milk, then add the flour mixture to the boiling mixture.

  5. Beat the eggs in a separate bowl, then stir them gently into the mixture.

  6. Bake the pie crust before adding the filling.

Make the meringue and bake

  1. Beat the egg whites until stiff.

  2. Gradually add the powdered sugar and vanilla flavoring to the egg whites.

  3. Spread the meringue over the pie filling.

  4. Sprinkle additional coconut over the meringue.

  5. Return the pie to the oven.

  6. Bake until the meringue is lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the filling and, as whites, build the stiff meringue that tops the pie.
Flour
Thickens the boiling milk mixture so the filling sets smoothly rather than staying runny.
Whole milk
Forms the liquid base of the filling, adding richness and body.
Shredded coconut
Adds coconut flavor and chewy texture to the filling and the topping.
Sugar
Sweetens the filling and, as powdered sugar, stabilizes the meringue.

The step that matters

Stir the beaten eggs gently into the mixture. Adding eggs to very hot liquid can scramble them. Stirring gently while adding them keeps the filling smooth and evenly set.
