What each ingredient does

Tapioca
Swells during soaking and boiling to thicken the milk into a pudding.
Milk
Forms the liquid base that the tapioca thickens into a creamy custard.
Sugar
Sweetens the pudding and adds body to the cooked milk base.
Egg yolks
Enrich the pudding and add richness and further thickening when stirred in.
Egg whites
Beaten stiff, they form a light foam that sets and browns as a topping.

The step that matters

Stirring in the egg yolks. Yolks can scramble if added to very hot liquid without care. Keep the pudding at a steady boil and stir continuously while they are incorporated so they thicken smoothly.
