What each ingredient does
- Ripe blackberries
- Provide the juice and the main flavour of the cordial.
- Boiling water
- Helps extract juice and flavour from the crushed blackberries.
- Sugar
- Adds sweetness and balances the tartness of the blackberry juice.
The step that matters
Letting it stand for 24 hours. Steeping the crushed blackberries in hot water draws out colour and flavour. Stirring a few times keeps the fruit in contact with the liquid so extraction is even.
