What each ingredient does

Cucumbers
Provide the bulk of the relish and its crisp texture once drained.
Onions
Add pungent flavor and aroma that mellows during the salting and standing.
Coarse sea salt
Draws water out of the cucumbers and onions, firming them and concentrating flavor.
White mustard seed
Adds a sharp, pungent bite and a crunchy texture to the relish.
Cider vinegar
Provides acidity that preserves the relish and gives it a tangy flavor.

The step that matters

Let the vegetables drain overnight. Salt must pull enough water out of the cucumbers and onions so the relish stays crisp and does not become watery once bottled with vinegar.
