Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the tomatoes

  1. Wash the tomatoes.

  2. Cut a thin slice from the stem end of each tomato.

  3. Remove the seeds and pulp from the tomatoes.

  4. Drain off most of the liquid from the tomatoes.

Make the filling

  1. Mix the bread crumbs, melted butter, salt, and pepper with the tomato pulp.

  2. Sprinkle the inside of each tomato with salt and pepper.

  3. Refill the tomatoes with the mixture.

  4. Replace the tops on the tomatoes.

Bake

  1. Place the tomatoes in a buttered pan.

  2. Sprinkle the tomatoes with buttered crumbs.

  3. Bake for 20 minutes at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the edible shell and release moisture that softens as they bake.
Bread crumbs
Absorb the tomato juices and pulp, giving the filling body so it holds its shape.
Butter
Adds richness and flavour to the filling and helps the topping brown in the oven.

The step that matters

Drain off most of the liquid from the tomatoes. Excess juice dilutes the filling and makes it soggy, so the crumbs cannot absorb enough liquid to hold a firm texture.

Swap the tomato

How well each one fits the dish's main ingredients (butter, bread, pepper):

  1. Capsicumfits better
  2. Tomatothe original
  3. Potatofits about as well
  4. Asparagusfits about as well

Fit is the average pairing score against butter, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
