Stuffed Tomatoes

Oven, in the book's wordsA hot oven

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the tomatoes

  1. Wash the tomatoes and cut a thin slice from the stem end of each.

  2. Remove the seeds and pulp, draining most of the liquid.

Make the filling

  1. Mix the crumbs, melted butter, and seasonings with the tomato pulp.

  2. Adjust seasonings to taste.

  3. Sprinkle the inside of each tomato with salt and pepper.

  4. Refill the tomatoes with the mixture and replace the tops.

Bake

  1. Place in a buttered pan, sprinkle with buttered crumbs, and bake for 20 minutes at 400°F (200°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Serve as the hollow shell that holds the filling while baking, and release moisture as they cook.
Cracker or soft bread crumbs
Absorb the tomato juices and bind with the pulp to form a filling that holds its shape.
Melted butter
Adds richness and carries flavor, and helps the crumbs brown on top.

The step that matters

Draining the pulp. Removing most of the liquid keeps the filling from becoming watery. Excess moisture would soften the crumbs and dilute the seasoning, so the filling would not hold together well in the oven.

Swap the tomato

How well each one fits the dish's main ingredients (butter, pepper, bread):

  1. Capsicumfits better
  2. Tomatothe original
  3. Potatofits about as well
  4. Asparagusfits about as well

Fit is the average pairing score against butter, pepper, bread. Candidates are from the same food group and used in at least 100 recipes.
