Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air, giving the pudding a light, tender crumb and rich flavour.
Eggs
Bind the batter and add structure as they set during baking.
Flour
Forms the main structure of the pudding as its proteins set with heat.
Baking powder
Releases gas in the batter so the pudding rises and becomes airy.
Blueberries
Add moisture, sweetness and bursts of fruit flavour throughout the pudding.

The step that matters

Folding in the blueberries. Overmixing once the flour is in develops gluten and toughens the pudding. Fold the blueberries gently, and mix the last flour only until just combined, so the crumb stays tender.
