Clam Chowder

Ingredients

Directions

  1. Pick over and drain the clams to remove shell pieces.

  2. Cut the pork into fine pieces and render the fat in a pot.

  3. Add the onions and fry for 5 minutes.

  4. Add the cubed potatoes, clam liquor, and enough water to cover.

  5. Cook until the potatoes are nearly tender.

  6. Pour the mixture into a saucepan and add the milk, butter, pepper, and salt.

  7. When the potatoes are done and the milk is boiling hot, add the clams and the crackers.

  8. Do not cook the clams longer than 3 minutes to avoid toughness.
