Escalloped Salmon

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Remove all bones and skin from the salmon.

  2. In a buttered baking dish, layer salmon and cracker crumbs alternately, finishing with crumbs on top.

  3. Sprinkle salt, pepper, lemon juice, and bits of butter on each layer of salmon.

  4. Place generous pieces of butter on the top layer of crumbs and cover with milk.

  5. Bake at 350°F (175°C) for about 30 minutes.
