Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Starchy body that mashes smoothly and holds the balls together.
Salt codfish
Supplies the savory flavor and firm, flaky texture of the balls.
Egg
Binds the mixture so the balls hold their shape while frying.
Butter
Adds richness and moisture to the mashed mixture.

The step that matters

Drain thoroughly before mashing. Excess water left in the potatoes and fish dilutes the mixture and makes it loose, so the balls may break apart in hot fat.
