Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

Assemble and bake

  1. Mix stale bread crumbs and cracker crumbs, then stir in melted butter.

  2. Spread a thin layer of the mixture in a buttered shallow baking dish.

  3. Layer oysters on top and sprinkle with salt and pepper.

  4. Add half of the oyster liquor and cream over the oysters.

  5. Repeat the layers, finishing with the remaining crumb mixture on top.

  6. Bake for 30 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Form the main filling and release savory juices as they cook.
Cracker crumbs
Provide the bulk of the crumb layers and absorb liquid for a tender, set texture.
Melted butter
Coats the crumbs so they brown and add richness.
Oyster liquor
Adds briny flavor and moisture to the filling.
Milk or cream
Adds moisture and richness that softens the crumbs into a custardy layer.

The step that matters

Bake for 30 minutes. Baking long enough lets the liquid from the oysters, liquor and cream soak into the crumbs and set, while the buttered top browns. Too little time leaves the filling wet; too much dries the oysters and toughens them.
