What each ingredient does

Veal steaks
The main protein, which the flour coating and sauce surround and finish.
Flour
Coats the steaks to help them brown in the butter and thickens the sauce.
Sour cream
Adds richness and a tangy acidity, and thickens gently as it simmers in the sauce.
Paprika
Gives the sauce its characteristic sweet, smoky red color and warm flavor.
Onion
Adds savory sweetness and aromatic depth to the sauce base.
Bouillon
Supplies the liquid that becomes the body of the sauce.

The step that matters

Boiling the sauce after adding the sour cream. Sour cream can curdle or separate when it gets too hot. Keeping the sauce at a gentle, controlled boil while the flour and sour cream combine helps it stay smooth and cohesive.

Swap the garlic

How well each one fits the dish's main ingredients (veal, pepper, flour, butter, onion, cream):
