What each ingredient does

Eggs
Beaten whites add lift, and the yolks bind the mixture so it sets when baked.
Sweetbreads
Provide the main body and tender, meaty texture of the timbales.
Stale wheat bread
Soaked, squeezed and mashed, it gives a light binder that adds softness and moisture.
Mushrooms
Add moisture and earthy flavour to the filling.
Truffles
Contribute a strong aroma and rich flavour to each timbale.
Grated onion
Adds a mild savoury aroma that rounds out the sweetbread flavour.

The step that matters

Folding in the egg whites. Egg whites hold air when beaten, and that air gives the timbales lift. Stirring them in vigorously deflates the foam and leaves a dense result, so fold gently until just combined.

Swap the white pepper

How well each one fits the dish's main ingredients (onion, wheat, bread, egg, mushroom, truffle):

  1. Garlicfits better
  2. Thymefits better
  3. Parsleyfits better
  4. White pepperthe original

Fit is the average pairing score against onion, wheat, bread, egg, mushroom, truffle. Candidates are from the same food group and used in at least 100 recipes.
