Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Grease small cups with butter.

Assemble the cups

  1. Line the cups with cooked rice, about ½ inch thick.

  2. In a bowl, mix the minced chicken with cream sauce or chicken broth, and add onion juice and celery if desired.

  3. Fill the center of the rice cups with the chicken mixture.

  4. Cover the top with another layer of rice.

Bake and serve

  1. Bake in the oven for 15 minutes.

  2. Carefully invert the cups onto a heated platter and serve immediately with your preferred sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cooked rice
Forms the outer shell that holds the filling and gives the cups their structure.
Cooked chicken
Provides the main protein and savoury filling that the rice encloses.
Cream sauce or chicken broth
Adds moisture to the minced chicken so the filling stays tender rather than dry.

The step that matters

Carefully invert the cups onto a heated platter. Rice held in shape by little binding can break apart if it cools or is handled roughly. Serving right after baking, while hot and set, helps the cups hold together when turned out.

Swap the onion

The recipe marks onion as optional. How well each one fits the dish's main ingredients (butter, rice, chicken, cream, celery):

  1. Potatofits better
  2. Leekfits about as well
  3. Onionthe original
  4. Asparagusfits about as well

Fit is the average pairing score against butter, rice, chicken, cream, celery. Candidates are from the same food group and used in at least 100 recipes.
