Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the sauce

  1. In a saucepan, melt the butter over medium heat.

  2. Stir in the flour and cook for 1 minute.

  3. Gradually add the cold water, stirring until smooth.

  4. Add the browned stock and more water if necessary to reach desired consistency.

Finish and serve

  1. Just before serving, stir in the chopped onion, parsley, hard boiled egg, lemon juice, and sugar.

  2. Place the baked fish on a platter and pour the sauce over it.

What each ingredient does

Butter
Enriches the sauce with fat and adds a rich, rounded flavor.
Flour
Thickens the sauce when cooked with butter, forming a smooth base.
Browned stock from baked fish
Carries the savory flavor of the fish and browned pan drippings into the sauce.
Hard boiled egg
Adds body and a mild, creamy richness to the finished sauce.

The step that matters

Adding the cold water to the flour and butter. Gradually whisking cold liquid into a hot butter and flour roux keeps starch granules dispersed, so the sauce stays smooth instead of lumpy.
