Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut the fresh boiled corn from the cob or use the pulp of one can of corn.

  2. Mix the corn with salt, pepper, flour, and sugar, then add the corn liquid.

  3. Melt the butter and mix it with the bread crumbs.

Assemble and bake

  1. Cover the bottom of a pudding dish with half of the bread crumbs.

  2. Add the corn mixture and cover with the remaining bread crumbs.

  3. Bake in a moderate oven at 350°F (175°C) for about 20 minutes and serve hot.

What each ingredient does

Corn
Forms the bulk of the dish and gives its sweet, tender body.
Flour
Thickens the corn liquid and cream into a soft, sliceable custard-like binder.
Cream
Adds richness and moisture, helping the mixture set softly when baked.
Bread crumbs
Form a crisp, golden topping and absorb butter for browning.
Butter
Adds fat for flavor and helps the crumbs brown in the oven.
