Almond Torte

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the egg yolks well with the sugar.

  2. Add the stiffly beaten egg whites and grated almonds alternately.

  3. Fold in the flour mixed with the baking powder lightly.

Bake

  1. Place the mixture in a well-greased springform pan.

  2. Bake in a moderate oven at 350°F (175°C) for about 40 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites give the torte its light, airy structure, and the yolks add richness.
Almonds
Grated almonds provide body and moisture, giving a dense, tender crumb in place of much flour.
Flour
Provides a small amount of starch that helps the torte hold its shape once baked.
Baking powder
Releases gas in the oven, helping the batter rise and stay light.
Sugar
Sweetens the batter and helps stabilise the yolks when beaten together.

The step that matters

Fold in the egg whites and almonds. Folding gently keeps the air beaten into the egg whites, which is what lifts the torte. Stirring or deflating the whites makes the crumb dense and flat.
