Coffee Creme Torte

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the cake layers

  1. Beat the egg yolks until thick.

  2. Add the powdered sugar, then the grated almonds, pulverized coffee, and vanilla.

  3. Fold in the well-beaten egg whites.

  4. Bake in two layers in a moderate oven at 350°F (175°C).

Make the filling and frosting

  1. For the filling and frosting, cream the butter and powdered sugar together.

  2. Add each egg yolk one at a time, mixing well after each addition.

  3. Add the coffee essence drop by drop.

  4. Keep in a cold place until used to harden the cream.

Decorate and serve

  1. Decorate with small chocolate wafers and candied cherries.

  2. Cut with a knife dipped in hot water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whites trap air for lift and yolks add richness and structure to the batter.
Almonds
Ground almonds add body, moisture and a nutty texture in place of much flour.
Butter
Creamed with sugar, it gives the filling and frosting a rich, smooth, fatty texture.
Powdered sugar
Sweetens the cake and, creamed with butter, helps make the filling light and smooth.
Coffee
Gives the torte its coffee flavour and aroma.

The step that matters

Add the coffee essence drop by drop. Adding liquid slowly lets the butter-sugar cream absorb it without splitting or becoming runny, keeping the filling smooth and thick.

Swap the almond
